Cheese And Onion Pie
On Saturday morning the plan was for Aneesh to take Ariyana to Ballet class while I hit the gym for a long run. But I ended up getting sidetracked with random things that needed attention at home like paying bills and gathering Ariyana's old clothes to donate. My desk was also starting to get cluttered and while I was organizing it I came across my mom's recipe for cheese and onion pie. She made this for lunch a couple of weeks ago during our visit home to Raleigh, North Carolina and all of us loved it. So my plan to go running didn't happen, but I was able to cross a few things off my "To Do" list and I made this delicious cheese and onion pie for lunch.
Ingredients:
1. 2 rolls of pastry dough (I am lazy and just use the Pillsbury ready made dough. 2 rolls come in a package)
2. 8 oz package of shredded cheese ( I used 1/2 pepper jack and 1/2 cheddar. The pepper jack gives the pie a nice punch of flavor)
3. 2 eggs
4. 1 cup milk
5. 1 large onion (red or yellow onion is ok) chopped
Directions:
1. Preheat oven to 400 degrees
2. Saute onions until just clear. (about 5 min) Optional-add spinach and cook another minute. Add onion and spinach mixture to the pastry lined pan.
3. Add the cheese on top of the onions/spinach mixture
4. Whisk together 2 eggs and the milk and pour over the cheese and onion mixture.
5. Place second sheet of pastry over the mixture, seal edges, and cut vents in the top.
6. Bake at 400 degrees for about 40 minutes.

OK, this looks ridiculously easy to make and delicious! I don't blame you for getting sidetracked from plans for the gym. Sometimes the best days are when you get sidetracked like this. Happy "notplanning".

mmmmm!
Naina - in dire need of your help. In crisis here. Can you do a post on women's formal work wear and places to find good clothes for work and some options on clothing like may be your top 5 choices for workwear and the stores that carry them?
Thanks soooo much!
Aparna.
And by work wear I mean business formals. I am planning to redo my entire work wardrobe and need some advise on buying maybe 10-15 pieces of clothing to start off.
Thanks again!
Aparna.
